Im going to write the same thing I wrote before when you posted this and it was removed and say I wouldn't eat american meat either.

1. fry onions and garlic 2. when they start to change colour, throw in rice (raw). 3. mix and cook for max a couple minutes. 4. put some white wine and cook a couple minutes 5. start putting some brodo (soup/consome). not much, just a cup, then when it evaporates put some more etc. repeat until risotto is almost ready "al dente". 6. put in the cheeses together, and a piece of butter. this time i used cheeses: gorgonzola, robiola, goat soft cheese. 7. mix until ready (should be a couple mins),serve in plates. 8. spread some parmesan on top.
